Celsus knows and uses Justin. While most of the material cited comes from 1 Apology, the facts are that Justin is unlikely to be an entirely fictitious personage. The debate with a Jew or Jews seems to be hinted at in other sources, at least in the broadest sense. It's reflected in documents like Tertullian Adversus Iudaeos/Book Three Adversus Marcionem. The idea that there was a nexus of "forgery factories" in a later period trying to "invent" aspects of early Christianity seems unnecessarily complicated.
